I call this my California Sandwich, because I mean, look at it. I'll be sharing a blend of recipes, some which are 'fancier' and others that are practical on a busy day. This falls into the latter category. I strongly believe some meals taste delicious because of their simplicity, this being one of them! This is super healthy and packed with protein because of the bread, avocado, and egg, while also having high nutritional value due to the microgreens and sprouts 🙂 Eat it post workout or over the weekend for brunch! Comes together in 5-10 minutes. Recipe below ☺️

The Goods:

· Ezekiel bread - 2 slices, lightly toasted

· 1 avocado, mashed with black pepper and everything season

· 1 fried egg (optional)

· Handful mixed greens

· Handful spinach

· Handful microgreens

· Handful mung bean sprouts

· Hot sauce of choice (I use Yellowbird Serano sauce and Valentino)

The Fun:

Toast the bread lightly and spread a little bit of butter. On one bread, put a layer of the greens and spinach. Spoon the mashed avocado mix on top of the greens/spinach. Pour a little bit of the hot sauce. Then layer the sprouts and microgreens and slightly press down so it gets embedded into the avo mash. Now put your fried egg on top, pour more hot sauce, and the other slice of bread. Cut it diagnolly and voila you got yourself a sandwich that makes you feel clean and healthy while eating it! 🥬🥪🥑🌱🍳🌶
