SPLIT URUD DAL with Right Rice

I’m so excited to share the first ‘basics’ Indian dish! I cook based on what I’m craving/feeling, meaning on many weeknights I want something healthy w/ protein while also being 'homey’ & easy. This split Urud dal is the perfect meal for exactly that. What’s great about Urud is you don’t ‘need’ to do any tempering of spices bc the flavor itself is enough, making this the simplest of dals. Also, 1 cup of Urud dal is ~40g of protein! We've started to eat this with Right Rice (which is a MUST try if you haven’t yet - its made from vegetables into a rice-like texture, meaning it's totally carb-free. That’s a win-win 🙌🏽). Otherwise, use brown rice or quinoa. Hope you like it and please tag/message me when you make it! Takes ~35 min.


The Goods (3-4 servings):

1 cup Split Urud Dal thoroughly washed (rinse until water is clear)

3-4 cups water

2 Thai green chillies slit down middle (sub with Serrano/jalapenos for milder spice)

2-3 dashes of hing/asafoetida

1 tsp turmeric

1.5 tsp red chili/cayenne powder

1.5 tsp cumin-coriander powder

Salt to taste

1.5 tsp lemon juice

Cilantro for garnish

2 handfuls of spinach(optional)

1 Right Rice package or Quinoa/Brown Rice

The Fun:

Plug in InstantPot and add in the 1 cup of rinsed Split Urud Dal and 2.5 cups of the water. Throw in the Thai green chillies, salt, hing, and turmeric/red chili/cumin-coriander powders. Mix it all together. Put IP in high pressure for 12 minutes. Once it's done, either let it NPR or manually release it after 13-15 min. While you are waiting for IP, make the Right Rice or other grain. For Right Rice, I follow the package directions & it takes 15 min - I'll add in salt and ghee for flavor. Once IP pressure is released, open it, set to saute mode, and mix it to see texture. Add in water to get to desired consistency, I added ¾ cup (swipe to last video). Throw in the spinach if using it. Let spinach wilt, adjust spices, mix lemon juice in, garnish with cilantro, & voila all done!🤗
